1. Steel cut oats and raisins with nonfat milk. Whole grain breakfast cereals like whole oats contain protein and fiber, and stay with you throughout the morning. Although raisins have a high glycemic index, their glycemic load is low, because in the proper portion size (2 Tbs.) it fits into your healthy diet.
2. Crunchy yogurt parfait. You’ll love this layered parfait of protein powder-fortified nonfat yogurt, wheat germ, chopped walnuts and blueberries.
3. Cottage cheese berry delight. Low fat cottage cheese is a good source of protein and goes well with any berry that’s seasonal.
4. Southwestern omelet, whole wheat toast and grapefruit. Use egg substitute or two egg whites and one yolk; sauté in a nonstick pan with diced onions, and green and red peppers. Add a quarter-teaspoon of chili powder, then add eggs and cook until set. Serve topped with a Tbs. of salsa. Round out this meal with whole wheat toast and half a grapefruit.
5. Cheese and tomato sandwich with avocado. Enjoy with whole grain bread and low-fat cheese of choice (I like low fat provolone). A quarter-cup of mashed avocado provides
healthy monounsaturated fat that’s quite satisfying and tasty.
6. Eggless egg sandwich. Enjoy this sandwich for breakfast or lunch. It’s made with firm tofu,egg-free mayonnaise, Dijon mustard and garlic to taste. Serve on whole grain English muffin with cantaloupe.
7. Mexican cottage cheese. Toast a sourdough or whole wheat English muffin and top with 1% or fat-free cottage cheese and salsa. Serve with a cup of cantaloupe.
8. Berry Nutty Yogurt Parfait. Another easy-to-love parfait that incorporates seasonal berries with a sprinkle of nuts and wheat germ. This combo works well together to achieve stable blood glucose and sustains you throughout the morning.
9. Vegetarian pita pocket. Quickly sauté onions, mushrooms, green pepper and diced firm tofu in a nonstick pan. Add a couple of teaspoons of tomato sauce, season with onion and garlic powder, and serve in a whole-wheat mini pita pocket.
10. Cold (low GI) cereal with milk or dairy substitute and fruit. Choose a cereal with at least 10 grams of fiber per serving -- one that’s low in sugar. Good choices include Kashi GoLean,Fiber One, or All Bran. Add 2 Tbs. of slivered almonds, your choice of 1% or nonfat milk or unsweetened soy or rice milk, and one cup of high-fiber berries.

Banana Pancakes

1/2 cup wheat flour 1/2 cup baking mix
1/4 cup soy flour 4 tsp. wheat gluten
1/4 cup Splenda® 1 banana (very ripe and mashed)
1 cup buttermilk 1/2 cup egg beaters
1 tbs. vanilla extract 1/2 tsp. banana extract
Mix dry ingredients together in a medium bowl. In a separate bowl mix together wet
ingredients. Add the wet to the dry and mix until blended. Do not over mix. Stir in banana. Use 1/4 cup measuring cup to pour batter into a heated non stick skillet. Makes 10 pancakes.
Serves 5 (2 pancakes) -- Stats: 150 calories, 11.4 g protein

Just substitute egg whites for eggs and NS syrup to
make it NS friendly and still packed with healthy energy!
1 cup quick cooking rolled oats 1/2 cup raw unsalted sunflower seeds
1/2 cup toasted wheat germ 1/4 cup whole-wheat pastry flour
1/2 cup dried apricots 1/2 cup raw almonds
1/2 cup raisins 1/2 cup pitted dried dates
1/2 cup powdered nonfat dry milk 1/2 tsp. ground cinnamon
1/3 cup pure maple syrup 2 large eggs
Preheat oven to 350. Coat a 9 by 13-inch baking pan with cooking spray. Place all
ingredients except the syrup and eggs in a food processor and pulse until the mixture is finely chopped. Add the syrup and eggs and pulse until the mixture is well combined. It will resemble a coarse paste. Transfer to the baking pan and spread evenly. Bake until just done, about 20 minutes. Cut into 20 squares.
Per Serving - Calories 133; 5 grams Fat; 5
grams Protein; 20 grams Carbohydrates (2.5 grams Fiber).

Granola Bars

2 cups rolled oats 3/4 cup packed brown sugar
1/2 cup wheat germ 1/2 tsp. ground cinnamon
1 cup all purpose flour 3/4 cup craisins
3/4 tsp. salt 1/2 cup honey
1 egg (or egg substitute), beaten 1/2 cup vegetable oil (or use 1/4 water, 1/4 oil)
2 tsp. vanilla extract 1/2 cup chopped almonds
Mix oats, brown sugar, wheat germ, cinnamon, flour and raisins and salt. Make well in center and pour in honey, egg, oil and vanilla, mix well. Pat mixture evenly into prepared pan. Bake for 30-35 minutes.
Makes 24 servings... 149 cal; 6.4 fat, 20.8 carbs, 3.1 protein

1/2 stick ICBINB Light 1 cup Splenda
1/2 cup Egg Beaters 3 very ripe bananas
2 cups self-rising flour 1/2 cup pecan halves
Mix ICBINB and Splenda. Add Egg Beaters and mix. Add mashed bananas and pecans and
mix. Add flour and stir till just mixed. Bake in loaf pan sprayed with nonstick spray for about 45-60 minutes.
1.5 oz. slice = 110 cal

Slimmed Down Mini-Bran Muffins

1 1/4 cups skim milk 1 1/2 cups All-Bran Cereal
1/4 cup Egg Beaters 1/3 cup applesauce
1/2 cup Splenda 1 1/4 cups self-rising flour
Mix milk with cereal and soak for at least an hour. Add egg beaters, applesauce and splenda, mix well. Add flour and stir till just mixed. Drop 1 Tbs. of mixture into each cup of a nonstick mini-muffin pan (48 muffins). Bake 20 minutes. Cool for 1 minute. Remove from pan. These are very chewy, but have a wonderful flavor.

Stuffed French Toast

2 pieces low calorie bread 2 tsp. fatfree strawberry or plain cream cheese
1/2 banana sliced or 1/2 cup berries 2 Tbs. egg beaters
Spread cream cheese on one piece of bread and top with fruit. Top with other piece of bread. Dip both sides in egg beaters and cook in a skillet with Pam until drowned. Enjoy!

Whole Wheat Pancakes

1 egg 1 cup whole wheat flour
3/4 cup fat free milk 1 tbs. splenda
2 tbs. applesauce 3 tsp. baking powder
1/4 tsp. salt
Separate egg and beat egg white until stiff peaks form. Set aside. Mix everything else together in a bowl with a whisk. Fold in egg white gently. This will make the batter light and fluffy and make pancakes very tender. You can also use this batter to make waffles. It should make about 9 4" pancakes at 100 calories apiece, if you use oil and brown sugar. This is one I use as a “treat” breakfast and I only eat one pancake, but believe me they are so filling and good! If you use it as your main dish and add a fruit and protein to it, it's a great Sunday breakfast! They also freeze well. I top with margarine and sugar free syrup.

3/4 cup sugar (splenda would work) 1 tsp. nutmeg
1/2 tsp. baking soda 1/4 cup egg product
1/2 tsp. baking powder 3/4 cup unsweetened applesauce
1/2 tsp. salt 1 cup zucchini
Mix flour, sugar, baking soda, powder, salt, cinnamon & nutmeg. In another bowl, mix egg product, applesauce & zucchini. Add wet ingredients to dry ingredients until well blended. Pour into small, sprayed loaf pan. Bake 45-50 min.

1 cup shredded zucchini 1 large egg
salt and pepper 1 pinch nutmeg
Toss the zucchini with some salt and allow to stand in a colander over a bowl for 10-20 minutes. Liquid will be drawn out of the zucchini. Squeeze excess water out of the zucchini and set aside. Scramble the egg with the nutmeg and some pepper then toss with the zucchini. In a frying pan spayed with nonstick cooking spray over medium-high heat divide the mixture into 2 mounds, then flatten slightly with the back of a spatula; then cook until the egg has set enough to turn. Turn and cook until set.

Apple Granola Bar "Custard"

I diced an apple, put it in a small Corningware round dish and microwaved 2 minutes. Then I crumbled the Apple granola bar on top of it, added 1 cup nonfat plain yogurt and cinnamon and nutmeg to taste. I stirred it all up and baked this for 1/2 an hour at 400 and it was sort of a cross between apple crisp and cheesecake. It was my all-in-one breakfast-dairy-fruit.

I took an apple, diced it and sprinkled on some artificial sweetener and cinnamon, just a tad of water and microwaved it about 2 minutes, it makes it almost like apple pie filling, then I put the granola cereal on it and topped it with a fat free vanilla yogurt, works for me. Might for you.

Breakfast Smoothie

I'm a breakfast-on-the-run type. It's been a struggle just making myself eat before I leave the house in the mornings. But the thing that makes it work for me is a breakfast smoothie. Blend together in a Smoothie Machine (the best investment I've made in awhile!):
1 scoop Pro-Rated Alpine Vanilla Whey Protein (Costco - it's sweetened with Splenda)
5-6 frozen strawberries or 3/4 cup frozen blueberries or cranberries
1 cup ice-cold water
2 packets Splenda (to sweeten the tart strawberries)
1 pkg. NS Cereal
Pour into a tall glass. I take my supplements in the morning with this smoothie and they never "bounce"!

Chocolate Cherry Crunch Bites

1 NS Low Fat Granola cereal
1 bag of NS Cherry Chocolates
1 package of Splenda
12 cherries (get the kind in a can, packed in water)
1 or 2 tsp. of cherry water juice from canned cherries
Crush 1 bag of NS cherry chocolates & dice the cherries. Add all the above ingredients together and mix. Place small bite size lumps of cherry crunch on a cookie sheet (10 - 15) Bake @ 350 degrees for 15 minutes. Counts as 1 Breakfast, 1 dessert & 1 fruit. Enjoy!

Cranberry Apple Crumble

Spray a small baking dish with butter flavored Pam. Place 1/2 sliced apple and 1/2 cup whole cranberries in it. Top with 2 bags of Splenda and another spritz of Pam, nuke until tender. Top with a crumbled cranberry breakfast bar and just a splash of orange juice and another spritz of Pam and put in toaster oven for a bit of a warm up of topping and to brown it a little.

1/2 cup unsweetened applesauce (I use Mott's Healthy Harvest Granny Smith)
1/2 package NS Low Fat Granola (about 1/4 cup if using another brand)
cinnamon and NutraSweet (or Splenda) to taste
fat-free Cool Whip or ice cream (optional)
Place applesauce in small microwave-safe bowl. Sprinkle with cinnamon and NutraSweet.
Cover top of mixture with layer of granola. Add more cinnamon and sweetener to top.
Microwave for about 45 seconds. Top with fat-free Cool Whip or a Tbs. of ice cream if
desired.

1 medium peach sliced: sprinkle with splenda and cinnamon. Microwave on low until soft: 1 min or so. Sprinkle the NS Low Fat Granola on it. Microwave for 2-3 min. Serve with fat free whip cream, if desired. I think it will work with other fruits: blueberry, raspberry etc.

I tweaked this recipe a little to include my new best friend -- soy flour. The addition of soy flour adds 7 g protein and 40 cal. It counts as fruit + entree + protein.
15 frozen cherries, defrosted
2 packets of Splenda
1 NS Low Fat Granola
1 tsp. Promise fat free spread
1 Tbs. soy flour
In a small Corningware dish, toss cherries with Splenda. In a separate bowl, combine
granola, spread and soy flour to make a crumb topping. Sprinkle on top of cherries and bake for 20 minutes on 350. Stats are 260 cal, 11 g. protein, 3 g fat, 6 g fiber

I used 4 of the NS Eggs and added green pepper, onion, mushrooms, broccoli and a little bit of feta cheese and made an omelet. I cooked it in a small casserole dish on 350 for 45 minutes. It was wonderful. I now have breakfast for 4 days already made. I heated it up this morning at work and everyone wanted to know what smelled so good!!!

1 package of NS eggs (any flavor will do, this morning it was mushrooms and peppers). Mix according to directions and pour into a nonstick round cake pan sprayed with Pam, spread around. Add to your "pizza" pizza style Canadian bacon (22 slices = 80 cal), I only use 10 at the most, a slice of fat free cheese or a few turkey pepperoni's (7-8, 1/2 serving). Add Pizza spices. Bake at 350 for about 20 minutes, you want it nicely brown on top.

2 NS breakfast egg cups
1 pack (10 oz.) frozen chopped spinach, defrosted
1/2 cup nonfat cottage cheese (80 calories – 1 protein serving)
2 oz. nonfat cheddar (or other flavor) cheese, shredded (80 calories– 1 protein serving)
4 Morningstar Farms breakfast sausages (chopped) (160 calories – 2 protein servings)
Preheat oven to 350 degrees. Spray a 9” pie pan or an 8” baking dish with nonstick spray. Empty egg cups into a large bowl. Place spinach in a strainer over another bowl and squeeze all the liquid out. Measure liquid and add water to equal one cup. Reconstitute eggs using this liquid. Add remaining ingredients and place into pie pan or baking dish. Bake for approximately 45 minutes or until casserole is firm in the middle. Serve with ONE NS muffin. Makes four NS breakfast entrée servings with four protein servings.

2 NS Scrambled Eggs (Dry mix)
1 cup (8 oz) liquid egg substitute
1 cup fat free milk
Blend ingredients in medium bowl with wire whisk. Add chopped veggies or chopped up ham as desired. Divide into 6-muffin pan sprayed with butter spray. Bake 15-20 minutes, until eggs set. Cool. Turn out of pan. Wrap and refrigerate. Recipe makes 2 servings (6 muffins).

I like to use three egg whites for my protein and beat them stiff to volumize my food serving. This morning I used the NS scrambled eggs and folded them into the egg whites, poured it into a small glass baking dish and baked at 350 until they were beginning to turn gold and felt dry to the touch. This made a beautiful golden little puff that really was tasty. Basically it is an egg soufflé.

French Toast Eggs

dash cinnamon
dash vanilla
I suppose you can use the cheese Nutrisystem eggs for this too. Mix ingredients together and whip them up really good. I use my Magic Bullet. You want them frothy. Then cook on a large griddle pan sprayed with some non stick spray. Cook until brown on underneath side and fold up like an omelet. It should be very thin, but it will be a little puffy from the frothy eggs. Serve with just a little sugar free syrup. To me, this tastes just like French Toast. It doesn’t have exactly the same texture, of course, but it satisfies my need for them.

Impossible Spinach Quiche

1 container NS scrambled eggs
1 packet NS pancake mix
1/3 cup milk
1/2 cup water
1 10-oz. frozen package of spinach, thawed and drained of excess moisture
1 Tbs. finely chopped white, yellow or green onion
dash Worcestershire sauce
salt & pepper to taste
2 oz low fat cheese, grated
bell pepper rings (optional) for garnish
Combine pancake mix, egg mix, milk, water, spinach, onion, Worcestershire and salt &
pepper. Pour into a pie pan that has been coated with Pam. Grate cheese on top of mixture and bake for 20 minutes. Cut in half for 2 breakfast servings, 2 dairy servings + vegetable. I have tried it with broccoli & mushroom instead of spinach. You can use any combination of vegetables you want or if you can afford the protein you could also add chopped ham or turkey bacon. The NS scrambled eggs is about equivalent to 2 eggs worth so use a generous half-cup of Eggbeaters (where 1/4 cup = 1 egg), or 1/4 cup Eggbeaters + 1 large egg.

1 cup chopped raw, combined celery, onion, mushroom, & bean sprouts
1 oz any diced chicken, lean beef, or pork
seasonings to taste
1/4 cup low sodium chicken stock
1/4 tsp. Splenda
1 Tbs. cold water
1 tsp. cornstarch
Prepare eggs as directed. Add celery, onion, bean sprouts, mushroom, and chicken, beef,and/or pork. Heat a medium skillet spray with Pam and brown egg mixture in batches on skillet and set aside. Heat chicken broth in a small saucepan, add Splenda and soy sauce and blend well over medium heat. Add cold water and cornstarch and stir until thick and smooth. Serve with Egg Foo Yung. Counts as 1 Breakfast Entree + 1 Protein + 1 Vegetable

Spiced Apple Cider Pancakes using NS Eggs

I'm not a fan of the NS scrambled eggs, but had some to use up so I used them with the NS pancake mix to make this. Here's what I did: I added 1/2 cup apple cider to the scrambled egg cup along with 1/8 tsp. each ground cloves, ginger, cinnamon and nutmeg. I stirred this all up,then added a packet of NS pancake mix into the cup and stirred it just to moisten (added a bit of water to make it pourable consistency). I made 4 pancakes and put 2 away for tomorrow. This was great with some SF syrup and veggie sausage on the side. It counted as my entree,
protein and fruit.

1 package NS muffins, any flavor ICBINB
2 Tbs. raisins (optional) 1 egg white
1/2 cup fat free milk 1 Tbs. Splenda
1/4 tsp. cinnamon 1 dash vanilla extract
Break muffins into small pieces into a ramekin or microwave safe bowl. Spray ICBINB over the muffins. If desired, sprinkle with raisins. In a small mixing bowl, combine egg white, milk, splenda, cinnamon, and vanilla. Beat until well mixed. Pour over muffins, and lightly push down with a fork until muffins are covered and soaking up the mixture. Microwave for 3 - 5 minutes.
Counts as 1 Breakfast + 1 Dairy + 1 Fruit (Optional)

NS Muffins (I used blueberry bran)
1 Morningstar veggie sausage patty
1 Tbs. fat free cream cheese
Heat sausage in microwave (1 min, wrapped in moist paper towel) and set aside. Slice
muffins into two pieces, a top and bottom each. Spread with cream cheese and nuke for 15 seconds. Cut sausage into two 1/2 circles. Assemble into sandwich. The muffins are so small that the 1/2 circles nearly fill up the middle of the muffin. You could use 1/4 of egg beaters instead of cream cheese or put some sugar free maple syrup on top and eat with a fork for a more mapley flavor. It reminded me of a McGriddle, in that it was sweet in the breading but savory in the filling. Counts as Breakfast entree + Protein + free food

Cut each muffin in half and dip it in a small amount of egg white, with vanilla and cinnamon. Cook in a pan sprayed with Pam until done on each side. Cover with extra cinnamon and sugar free syrup. Microwaved a cut up peach for 30 seconds and pour on top. Serve this with a morning star breakfast patty. Yummy french toast!

1 tsp. brown sugar, divided cinnamon powder, to taste
butter flavor Pam sprinkle of water
Place fresh berries on bottom of sprayed individual ramekin. Sprinkle 1/2 tsp. sugar over berries. Mix together oatmeal, 1/2 tsp. sugar, and cinnamon to taste. Spray butter flavored Pam over top and stir again. Sprinkle small amount water over top and stir again to make mix lumpy. Spread over top of berries. Bake 20 min or until top is brown and fruit bubbly.

1 NS Apple Cinnamon Oatmeal 1 cup frozen berries (or other fruit serving)
1 tsp. fat free cream cheese splenda
1/2 tsp. butter (totally optional and doesn't need it - I just like things browned on top)
Put berries in an oven proof dish and sprinkle with splenda. Mix cream cheese (& butter) and oatmeal. Then crumble over berries like cobbler topping. Bake at 350 for 20-25 minutes.

2-4 packets Splenda 1/8 tsp. baking soda
raisins or dates (1 fruit serving's worth) cinnamon to taste
1/2 tsp. vanilla drops of fat free milk
Cream margarine & Splenda. Add baking soda, cinnamon, vanilla & oatmeal. Add drops of
milk until cookie dough consistency. Stir in raisins or dates. Drop by spoonful onto cookie sheet sprayed with Pam. Flatten slightly. Bake 12-15 min, cool 5 min. on cookie sheet.

Another Great Use for Pancakes

I cut up 1-1/4 cup strawberries, mashed 2 packets of Splenda into the strawberries, and let
them macerate. I then mixed the NS pancakes according to directions and cooked them on a
nonstick griddle. By lightly spreading the circles of batter a little further with a spoon after I
drop them onto the griddle, I always find I can make 3 decent-sized pancakes. Between the
cooked pancakes, I layered pats of fat free cream cheese (1/8 of an 8-oz bar). Once the heat

1 egg, slightly beaten 1/2 banana, mashed
1/3 cup vanilla nonfat yogurt 1/2 tsp. vanilla extract
2 Tbs. sugar substitute (I use Splenda) 1 pkg. NS Pancake Mix
1 Tbs. chopped nuts (optional)
In small bowl, mix banana, egg, yogurt, vanilla, and sugar substitute, stirring well after each addition. Stir in pancake mix. Add nuts, if desired. Bake 35 minutes or until toothpick inserted in center comes out clean. If you prefer to cook this in the microwave, the texture will be a little spongy, but the taste is great. I microwaved mine in a large cereal bowl for four minutes.
1 Breakfast Entrée, 1 Dairy/Protein, 1 Fruit, (1 Fat).
Without nuts: 270 calories, 5g fat, 16g protein... With nuts: 320 calories, 10g fat, 17g protein

Start with pancake mix, add 1/3 cup milk and a little more water. Cook on a Teflon griddle (no fat). Pancakes will be very thin. Turn once. and set aside. Makes about 4 crepes. In a separate dish combine 1/4 cup ff cottage cheese, Splenda to taste, one egg white to help the cheese stick together (optional) and chopped up fruit of your choice. I used Strawberries, but blueberries, applesauce, peaches or raisins will work too. Mix thoroughly and put 1/4 of the mix on each of each crepe. Roll it up. Add ff sour cream if desired. Sour cream was always a standard on my regular cheese blintzes. Enjoy!

NS pancake mix + 1/4 tsp. baking powder + 1 pack Splenda + 3-4 tbs. fat free milk
Stir together until stiff, sticky dough forms. Divide into two mounds on sprayed cookie sheet, about 2 inches apart. Bake at 350 for 12 minutes or until "biscuit" begins to turn brown.
Mix: 1 oz fat free cream cheese + dash cinnamon + dash vanilla + 1-2 packs Splenda.
Add a drop or two of fat free milk to thin out just a bit.
Mix: 1 1/4 cup fresh strawberries + 1 pack Splenda
Take one biscuit, spread with 1/2 cream cheese mixture then 1/2 strawberries. Top with the other biscuit, spread with remainder cream cheese and strawberries. Top with a dollop of fatfree Cool Whip.

I hand-dipped the tops of the donuts into heated Hershey's non-sweetened cocoa powder mixed with 1/8 cup of water and 1 Splenda packet to make a chocolate sauce (you could also use melted NS dessert chocolates).

Mix it all together. Spray a skillet, pour in the mixture, and place on medium-low heat. Cover.Cook till bottom is nicely browned and the top appears done. Can flip it over to brown the top side a bit. Spray the brownest side with ICBINB and eat! Serves one, and includes a fruit and a protein serving and a few extra calories for the nuts.

2 NS Pancake Mix (or Sub 2/3 c Heart Smart Bisquick - soy optional)
1 egg
1 container "diet" yogurt (under 90 calories, generally)
Splenda to taste (usually 2-4 Tbs. but more with tart fruit)
2 servings *dried* fruit (Raisins, Craisins, apricot, dried cherries, chopped dried apples, etc.)
1/4 tbs. vanilla or other extract (optional)
Spices (optional, but I add cinnamon or nutmeg to most.
If I use the Vanilla yogurt and no cinnamon, I have added a shake of Molly McButter to add bit of richness to the batter.) I sometimes add about 1/4 tsp. baking powder, since I add soy flour to the Bisquick to make it closer to the NS mix in protein. It does make the muffins fluffier, but it will work without it if you are in a hurry.
Preheat oven (or toaster oven) to 350. Blend together, until all dried mix is moist. If mixture seems too thick, you could add a bit of milk or Torani syrup (caramel is good with the apples!) to get the right consistency. Spray 6 muffin tin with nonstick spray and divide evenly into 6 muffins. Bake for 20-24 minutes. 6 muffins = 2 breakfasts with protein and fruit serving included. (The egg and yogurt are two protein servings. Be sure to check the measurements on the dried fruit as it is much less than fresh fruit.)
Other favorites:
Vanilla yogurt with mixture of raisins and chopped dried apples and lots of cinnamon
Chopped dried apricots and peach yogurt Lemon yogurt with dried blueberries. I add 1/4 tsp. of Crystal Light Lemonade powder. You can add fresh fruit but do not add any extra liquid!! These may need extra time and will
be moister. I used fresh blueberries with lemon yogurt and they were really juicy - almost had to eat with a fork! Would have been a good coffee cake. You could probably make a coffee cake easily by placing in a casserole dish and baking a bit longer. These are easy and fast and should freeze well, if I can ever resist them the following morning! I hope you enjoy them as well. I am trying to figure out how to do a pina colada version without it being too moist due to the moisture in crushed pineapple. Tomorrow I am going to try vanilla yogurt, dried cherries and add Hershey's cocoa to see if I can't come up with a Black Forest Muffin!

Mix and microwave for 4-5 minutes. Just cook until it's not shiny anymore. While that's cooking, make the sauce: 1 peach sliced and peeled + 2 tsp. Splenda with Brown Sugar + Fat Free Promise Ultra. Start that cooking in skillet and when it's almost done add some almond extract and 2 Tbs. orange juice. Top cake with peaches and cool whip.

I used three egg whites for my protein, banana for fruit and 1/3 cup fat free plain yogurt instead of milk. I beat two of the egg whites until stiff, beat 1 egg white with banana and yogurt, folded banana mixture into egg whites and then folded pancake mix into this. These were so light and fluffy that I made them into dollar sized pancakes to make them easier to handle and there were about 20 of them.

Mix NS pancake mix with 1/3 cup WATER (not milk like the package says). Reserve 1 Tbs. of the mixture, and use the rest to make pancakes. After pancakes are cooked and out of pan, spray a little nonstick spray, and add veggie meat crumbles. Allow to heat for 1-2 minutes. Add skim milk. Stir until mixture comes to a boil, then add salt, pepper, and reserved pancake mixture (this will thicken up your gravy). Stir well for about a minute, or until mixture thickens to the consistency you like. Pour over pancakes and enjoy.

1/2 cup canned peaches in juice pie spice to taste

Cinnamon
Use dish that will allow mix and peaches to expand a bit while cooking. Mix splenda with peaches for extra sweetness. Mix pie spice to taste, with peaches. Spray ICBINB spray over peaches. Mix up pancake mix with 1/4 up skim milk. Add vanilla extract and mix. Add more splenda to pancake mix for more sweetness. Pour pancake batter over peaches, spray with ICBINB and sprinkle cinnamon on top. Cook 2 min on high in microwave. Let cool slightly. Eat with fat free vanilla yogurt (or other milk serving), and prepare to get full!

I tried this with frozen blackberries. I topped the blackberry cobbler with fat free cool whip. It looked like a HUGE portion of cobbler. Based on the recipe above, it tasted OK. I did add 1 packet of splenda to the blackberries and 1 packet to the pancake mix. I think the pancake mix could have used more Splenda and maybe even some pecan pieces. It probably would have been better baked and maybe even mixing more of the fruit with the pancake mix (not totally together but not totally separated with all fruit on bottom and all mix on top).

Mix the pancake mix, skim milk, vanilla and cinnamon together. Drain peaches. Place the peaches on one side of pan, sprinkle with cinnamon and while they caramelize from the coating of liquid clinging to them and cinnamon, pour batter on other side of pan. The peaches will get very soft and break up some, just stir until pancakes are done cooking. Place pancakes on plate, top with hot cinnamon peaches, and add fat free cool whip on top.

This is sort of a cross between a Dutch Baby pancake and fruit-topped Yorkshire pudding. Should serve 4 with breakfast but why not just two? The ingredients are pretty minimal. I'm fond of adding herbs to recipes and rather than decide for you what to add, I'm listing herbs that are useful with fruit -- Anise, cilantro, lemon balm, lemon verbena, mint, rosemary, ginger, lavender and many of the scented geraniums. Mix together in a small dish and set aside:
1 T Brown sugar (Splenda) and 1/4 tsp. cinnamon.
Mix with a whisk or mixer:
1 egg 1/2 cup milk
1/2 cup flour 1/8 tsp. salt
Let sit while you heat oven to 400. Into hot oven, place a pie pan with 1 T butter (ICBINB) and let melt and pan get hot. Have ready a peach that's been peeled and sliced thinly (or use apple). Take pan from oven and hurriedly pour batter into sizzling butter. Arrange sliced fruit on top quickly and sprinkle with splenda/cinnamon. Return immediately to oven and bake for
25 minutes.

I made the NS pancake batter extra thin and made crepes from it. I used 8" non stick fry pan sprayed with butter spray after each crepe. Pineapple Upside Down Cake

This is not my recipe, it was posted by winetroll on Jazz's site. I bake it, as I don't like the texture when you try to "bake" something in the microwave.
1 Dole Pineapple Fruit Bowl (packed in 100% fruit juice)
1 package NS Pancake Mix
2 maraschino cherries, chopped (for color)
couple drops vanilla
fat free Cool Whip (optional)
Drain pineapple reserving juice. Put pineapple tidbits and cherries in small microwave safe bowl. Mix pineapple juice with pancake mix, and vanilla. Add a splash of milk if the batter is too thick. Pour batter over pineapple and cherries. Microwave for two minutes (microwave times may vary) or until batter is "set". Invert bowl on plate. Top with fat free Cool Whip.
Counts as 1 fruit, 1 NS Breakfast, and 1 free food. After I take it out of the oven, I sprinkle a generous amount of Splenda Brown Sugar blend on top of the pineapple, and spray with ICBINB. It makes a caramel like topping.

Pineapple Upside-down Cheesecake

1 package of NS pancake mix 3/4 cup fresh pineapple
1/2 cup water 1 tsp. maple syrup (20 cal. - free food)
1 oz fat free or light cream cheese or 1 wedge Laughing Cow Light Cheese
Slice 1/4 of the pineapple into small pieces, and finely chop the rest. Combine the pancake mix and finely chopped pineapple and only enough water to make everything moist like cake batter, not runny like pancake batter. You may need more or less water, so add a little at a time - you can always put more in, but you can't take any out! In another bowl, mix the rest of the pineapple with the maple syrup. Coat a medium ramekin or large muffin pan with nonstick cooking spray. Place pineapple and syrup mixture on the bottom. Pour 1/2 the cake batter into the pan. Then place or spread the cheese into the pan. Top with the remainder of the batter. Bake for about 25 minutes or until it is golden brown. Turn the cake out onto a plate and eat hot or wait to cool.

Thinly slice 3-4 scallions and stir into packet of NS pancake mix. Add some Emeril's Asian Essence (salt, pepper, onion, garlic, five spice powder). Add milk - maybe a little extra water for thinner pancakes. After cooking, spray with I Can't Believe It's Not Butter spray. Shirley's Cream Cheese Danish

1 package NS Pancake Mix 2 Tbs. Splenda
2 Tbs. fat-free cream cheese 2 Tbs. fat-free sour cream
1 Tbs. egg substitute 1/4 tsp. lemon extract
Dash of vanilla extract
Optional: 3/4 cup fresh or frozen (thawed) blueberries
Mix Pancake Mix with 1/3 cup skim milk, per directions on package. Add 1 T. Splenda and a dash of vanilla extract. Spray a small oblong "au gratin"-type casserole (4 3/4" wide, by 7 1/2" long, by 1 1/2" deep) with nonstick spray. Pour or spoon mixture into casserole. Set aside.
Mix cream cheese, sour cream, egg substitute, 1 T. Splenda, and lemon extract in a cup or small bowl. Spoon cream cheese mixture onto top of pancake mixture, spreading it evenly over the top (or, depending on the size of your casserole dish, you can make little "wells" or "pockets" of cream cheese over the top). Bake in a 350-degree oven for about 15 minutes, or until pancake mixture is set. (Cream cheese mixture may still be a little watery, but it will set and be creamy when cooled.) If desired, top with fresh or frozen blueberries.
Counts as breakfast entrée + 1 protein serving + 1 fruit serving (if blueberries are used for topping) + free foods

Sour Cream Pancakes

Pancake mix, 1/4 cup fat free sour cream and 2 Tbs. skim milk, mixed with a wire whisk (I also added blueberries and raspberries to mine) and cooked on a non stick griddle. Much richer and thicker than the normal pancakes. Also, I found sugar free syrup by Smuckers which has a thick consistency like regular syrup and no sugar alcohol (nutrasweet).

1 NS Pancake Mix 1/8 cup Egg Beaters or 1/2 beaten egg
1/4 cup ff strawberry cream cheese 1/8 cup skim milk
1 TB Splenda 1/2 tsp. vanilla
dash cinnamon
Blend cream cheese and egg together. Mix in skim milk, Splenda, vanilla, and cinnamon. Add pancake mix & stir just until blended. Divide batter among 6 mini-muffin wells or 2 regular size. Bake 6-8 minutes or until tops are firm to the touch (longer, with regular size muffin tin). Upon removal, spritz tops w/ ICBINB spray if desired. 1 breakfast entree + 1 protein

1 NS Pancake Mix 1/3 cup milk
1/8 cup Egg Beaters 4 squirts ICBINB
3 tbs. Splenda dash salt
dash cinnamon 1 cup strawberries, sliced
2 tbs. fat free Cool Whip
Spray single serve baking dish with Pam. Prepare Pancake mix as directed, adding Egg
Beaters, ICBINB, Splenda, salt and cinnamon. Add strawberries and put in dish. Bake for 18-22 minutes depending on your oven. Should come out looking just like a cake. Add fat free Cool Whip on top. Counts as 1 NS breakfast, 1/2 dairy, fruit and free food.

1/3 cup Bisquick 4 pkg. Splenda, divided
skim milk to moisten ICBINB spray -- 6 SPRAYS
6-8 strawberries (use fruit serving amount) 3 tbs. fat free vanilla yogurt
Combine bisquick, 2 pkg. splenda & milk. Bake in 2” dish until done. Let cool and cut in half. Crush 3-4 strawberries, add yogurt and 2 pkg. Splenda. Layer this in middle of biscuit. Top biscuit with the remaining strawberries.

1 pkg. NS Pancake mix, prepared and thinned with water to pourable consistency,
1/4 cup nonfat cottage cheese,
Crystal Light orange/pineapple drink (just a sprinkle is needed),
1/3 cup minced pineapple, canned in juice (drained, save juice with remainder of pineapple),
1/2 tsp. rum extract
1 packet Splenda
Pour pancake mix into large frying pan coated with PAM. Cook till brown and flip (easiest way is to lift a corner with spatula and partially slide onto plate and then flip pancake). Sprinkle a little Splenda on outside. Mix cottage cheese, pineapple, and a sprinkle of Crystal Lite (not too much!). While crepe is in pan, spoon 3/4 of filling into center and roll into a crepe, place on plate. Top with rest of cottage cheese mixture. NS Entree, 1 fruit, and 1 dairy.

1/3 cup reduced fat Bisquick mix 2 packs Splenda
1/6 cup nonfat milk 1/6 c. Egg Beaters
your favorite NS friendly syrup 1/4 c. Egg Beaters
Mix all ingredients except syrup and 1/4 cup Eggbeaters. Add drizzles of milk as needed to make workable pancake batter. Make 4-6 small pancakes in nonstick Pam spray. Use ¼ cup eggbeaters to make 2-3 omelet "patties". Make sandwiches w/ 2 pancakes, 1 egg patty and syrup. I made these for "NS on own" plan, but you can try the NS pancake mix, might turn out just as well.
This counts for breakfast entree and protein (+ free food) at approximately 215
calories, 15.5 g Protein, 3 g Fat

I don't know if people already know this, but my dad always told me growing up that pancake mix and waffle mix were basically the same. So I made the pancake mix with just a splash more fat free milk and a dash of vanilla and made a waffle with it in my waffle maker. Came out perfect with a few sprays of ICBINB and SF syrup.

*1 NS pancake mix prepared as directed adding just a bit of water to thin it out.
* spray griddle with Pam spray
* pour on griddle in lines/strip shapes & let strips brown on both sides or until slightly crispy.
* remove & place on paper towel, sprinkle with splenda & cinnamon.
* wrap in wax paper cone & voila!! awesome!

Zucchini Bread from Pancake Mix

I figured out how to make psudo-zucchini bread using the NS pancake mix. But it didn't turn out exactly the way I wanted it to, so maybe you all could help me tweak it?
1 package NS Pancake mix 1/2 cup grated zucchini
1/4 tsp. vanilla 1/4 tsp. imitation butter flavor
2 Tbs. egg substitute 3 Tbs. fat free soy milk (could use regular milk)
1/8 tsp. baking soda 2 packets Splenda
1/4 tsp. cinnamon
Mix ingredients together, pour into mini loaf pan and bake approx. 20 minutes at 375 degrees.

Zucchini Bread-like Pancakes

1 pkg. NS Pancake Mix 3 pkgs. Splenda
splash of vanilla 1/4 tsp. imitation butter extract or ICBNB spray
grated nutmeg (fresh if possible) pumpkin pie spice
Cinnamon 3/4 to 1 cup loosely packed grated zucchini
nuts or raisins if desired (amount per NS guidelines), I personally, left them out.
Mix dry ingredients, then add extracts and water or milk until a thin batter, fold in zucchini and make as you would pancakes on griddle sprayed with PAM. Made six good sized pancakes.
